✍ Borscht is the central and most beloved dish on our table. However, many classic recipes recommend adding at least a spoonful of sugar to balance the acidity of tomatoes. When we faced type 2 diabetes and macular edema, we had to completely rethink this habit.
We looked closely into why there should be no sugar at all in borscht and how to make this dish incredibly flavorful without white sugar from the sugar bowl.
In borscht for someone with type 2 diabetes and macular edema, there should be no sugar at all — not even a single teaspoon. Even a small pinch of refined sugar added while sautéing vegetables turns a healthy meal into a source of fast carbohydrates. Such sugar is absorbed instantly into the bloodstream, causing an unwanted spike in blood glucose levels.
✨ How We Make Borscht Flavorful and Rich Without Sugar
- Natural sweetness of vegetables: Beets and carrots naturally contain healthy carbohydrates. When slowly sautéed in a small amount of oil, these vegetables release their natural sweetness into the broth. This amount of carbohydrate is more than enough for a harmonious taste, and it is absorbed much slower than white sugar.
- Quality meat broth: A rich broth made from chicken, turkey, or lean beef provides a deep savory taste (umami), ensuring the borscht never tastes bland.
- Aromatic herbs and garlic: At the very end of cooking, we add plenty of chopped parsley, dill, and pressed garlic. This gives the borscht a bright, appetizing aroma, making the absence of added sugar completely imperceptible.
- Natural tomato paste: We use high-quality tomato paste with ingredients containing strictly tomatoes and salt, with no added sugar. It provides just the right amount of pleasant acidity.
Today, we cook our borscht relying exclusively on the natural sweetness of carrots and beets. It remains amazingly delicious, satisfying, and completely safe for both blood vessels and blood sugar levels 🍲✨
